Tasting Note
Evolved, aromatic red with dried black cherry, plum, tobacco, leather, cedar and warm spice. Full-bodied, rich fruit balanced by bright acidity, firm chewy tannins and a very long, savory finish.

Western: roasted lamb, braised beef, venison, osso buco, aged Pecorino or Parmigiano; Asian: Peking duck, char siu (Cantonese BBQ pork), Korean BBQ beef (bulgogi), Sichuan-style beef or lamb, rich teriyaki beef.

Production Method
Blend of indigenous grapes; temperature-controlled fermentation with extended maceration, aged 18–24 months in French barriques then matured in bottle for 12–14 months.
