Tasting Note
Dense dark berries, ripe plum and black cherry with Mediterranean herbs, leather, tobacco and spicy oak; velvety texture, ripe fine tannins and long mineral-tinged finish.

Food Pairing
Western: grilled lamb, braised beef, game, aged Pecorino and hard cheeses. Asian: Korean BBQ (bulgogi/galbi), Sichuan beef, hoisin/roast duck, teriyaki beef.

Production Method
Careful grape selection, temperature-controlled fermentation with extended maceration and delestage/punch-downs; 18–24 months in French barriques then bottle aging.
