Tasting Note
Intense ruby. Aromas of black cherry, blackberry, plum, Mediterranean herbs, spice, tobacco and vanilla. Full-bodied, concentrated, with firm yet refined tannins and a long, persistent finish.
Food Pairing
Western: roast lamb, wild boar or game stew, braised beef, aged Pecorino and mature cheeses. Asian: Sichuan braised beef, Korean BBQ (bulgogi), Peking duck, spicy lamb curry or Indonesian beef rendang.
Production Method
Hand-harvested; fermentation 28–32°C with 16–18 day maceration using delestage; aged 18–24 months in French barriques, then 12–14 months in bottle.
