Tasting Note
Intense ruby with aromas of black cherry, ripe plum, violets, Mediterranean herbs, cocoa and spice. Full-bodied, concentrated fruit with fine-grained tannins, lively minerality and a long, savory finish.

Food Pairing
Western: roasted lamb, braised beef, game, aged Pecorino, charcuterie and mushroom risotto. Asian: Korean BBQ (galbi), char siu, teriyaki beef, Sichuan-style beef, rich Indian lamb curry.

Production Method
Hand-harvested; controlled-temperature fermentation with long maceration (16–18 days) and delestage; aged 18–24 months in new French oak barriques, then 12–14 months in bottle.
