Tasting Note
Ripe orchard fruit (pear, white peach), citrus oil and toasted almond with beeswax, hazelnut and a stony mineral core. Bright acidity with creamy mid-palate and a long, savory finish.

Western: roasted chicken, butter-poached lobster, mushroom risotto, creamy pasta, Comté or aged goat cheese. Asian: miso-glazed black cod, seared scallops with soy-butter, sushi (fatty tuna), mild Thai prawn dishes, tempura vegetables.
Production Method
Hand-harvested Chardonnay; native/selected yeast fermentation in French oak (mostly older barrels and some large 600L casks); malolactic fermentation and 12–18 months lees ageing; minimal new oak, bottled largely unfined/unfiltered.
