Tasting Note

Concentrated old‑vine Pinot Noir: dark/ wild berries, black cherry, plum, peony/rose petal, orange rind and spice, with earthy sous‑bois, focused acidity and refined, silky tannins; long, precise finish.

Western: roast duck, beef bourguignon, lamb rack, mushroom risotto, charcuterie and aged cheeses. Asian: Peking duck, miso‑glazed salmon, char siu, braised short ribs, Korean bulgogi, mushroom hot pot.

Production Method

Blend of three old‑vine village parcels; ambient/indigenous yeast fermentation with partial whole‑cluster (c.50–60%), 16 months in oak (≈30–33% new); minimal fining/filtration.

Produced by Arnaud Mortet from three village parcels (En Champs, Aux Échezeaux, Combes du Dessus) with vines 80–120+ years; Mortet launched his eponymous label after acquiring holdings and vinifies alongside Domaine Denis Mortet; practicing organic/low‑intervention.
