Tasting Note
Lemon curd, glacé pear and brioche with oyster‑shell minerality, toasted almond, nougat and subtle truffle notes. Creamy mousse, bright saline acidity and a long, honeyed, savory finish.

Western: oysters, lobster, smoked salmon, roast chicken, porcini or truffle risotto, aged cheeses. Asian: sushi/sashimi, tempura, Peking duck, dim sum, Thai seafood or lightly spiced Vietnamese dishes.

Production Method
Méthode traditionnelle (bottle secondary fermentation). Base wines fermented on solids with some malolactic and a small % in new French oak; ~13 years on lees; low dosage (~3.1 g/L).
