Tasting Note
Blackcurrant and blackberry compote with preserved plums, candied violets, chocolate-box spice, menthol and garrigue; full-bodied, velvety texture, ripe tannins and an epic persistent finish.

Food Pairing
Western: grilled ribeye, roast lamb, mushroom risotto, aged cheddar. Asian: Peking duck, Korean beef bulgogi, Cantonese char siu, spicy Szechuan beef or braised short ribs.

Production Method
Hand-harvested small lots, separate fermentations with extended maceration, aged in French oak barrels and carefully blended; bottled early 2019.
