Tasting Note
Sweet black- and red-fruit core (crème de cassis, plum, mulberry) with notes of cedar, violet, spice and subtle forest floor; medium-full body, polished firm tannins and a juicy, long finish.

Food Pairing
Western: grilled ribeye, lamb chops, roasted mushrooms, aged cheddar. Asian: char siu/pork belly, Cantonese roasted duck, Korean BBQ (beef bulgogi), spicy Sichuan beef.

Production Method
Estate fruit, small-lot vinification with barrel fermentation/aging in French oak; micro‑lot barrel handling and gentle rolling during fermentation to manage tannin extraction.
