Tasting Note
Mineral-driven, concentrated Chardonnay: zesty lemon and bergamot, white peach and baked apple, crushed stone and subtle smoky/bacon-fat reduction. Fine-grained texture, bright, precise acidity and a long, saline, chalky finish.

Food Pairing
Western: roast chicken, lobster or meaty white fish (sea bass), creamy pasta or risotto, soft goat cheeses. Asian: miso-glazed cod, sushi (especially oily fish), tempura, Cantonese steamed fish, mild Thai coconut curries.

Production Method
Hand-harvested grapes; long gentle press; indigenous-yeast fermentation; élevage ~12 months in 350L barrels (≈20% new) then ~6 months in stainless tank; sustainable/low-intervention practices.

Domaine Bachelet-Monnot (brothers Marc & Alexandre Bachelet), founded in 2005 in Dezize-les-Maranges. Owns high-quality Côte de Beaune parcels; Folatières vines circa 40–50+ years on high-altitude, thin topsoil over chalk.
