Crisp Puligny with lemon zest, green apple, white peach, subtle bacon-fat/creamy notes and wet-stone/oyster-shell minerality; focused acidity, medium-plus body and a saline, persistent citrus finish.

Production Method

Hand-harvested Chardonnay; whole-berry press, indigenous-yeast fermentation and élevage in 350L demi-muids (c.20–25% new) for ~12 months, then ~6 months in stainless tank; minimal bâtonnage, low-intervention approach.
