Tasting Note
Fresh yellow plum, citrus peel and lime with crushed stone minerality, white flowers and a saline, stony finish. Initially reduced/ smoky, then opens to persistent, tightly wound fruit and bright acidity.

Western: butter-roasted lobster, seared scallops, roast chicken with herbs, mushroom risotto. Asian: miso-glazed black cod, steamed sea bass with ginger & scallion, tempura, richer sushi (e.g., saba).

Hand-harvested; indigenous yeast fermentation; élevage ~12 months in French oak barrels (≈20–25% new); malolactic fermentation; emphasis on finesse and low-intervention cellar work.
