Tasting Note
Perfumed red cherry and raspberry with violet, sous‑bois and crushed stone. Silky mid‑palate, fine dusty tannins, saline minerality and subtle oak; youthfully austere with an elegant, lingering finish.

Food Pairing
Western: roast duck, coq au vin, mushroom risotto, herb‑crusted lamb, beef bourguignon. Asian: Peking duck, char siu pork, miso‑glazed fish, shiitake ramen, Korean bulgogi.

Production Method
Hand‑harvested; partial destemming; fermentation with native yeasts; aged ~18–20 months in small French oak barriques (low % new); sustainable/organic vineyard practices.
