Tasting Note
Bright red cherry and cranberry with plum, forest-floor and mushroom notes; silky, talc-like tannins, lively acidity, medium body and a long mineral-driven finish.

Western: roast duck, grilled salmon, mushroom risotto, pork tenderloin, mushroom-based dishes. Asian: Peking duck, teriyaki or miso-glazed salmon/black cod, shiitake stir-fry, char siu, beef bulgogi.

Production Method
Hand-harvested estate fruit; organic since 1993 and biodynamic practices since 2002; minimal intervention, native yeast fermentations, gentle extraction and maturation in French oak.
