Tasting Note
Perfumed red cherry, blood-orange and spiced-cherry notes with forest-floor and floral undertones. Medium-bodied palate: sweet-savoury fruit, bright acidity, fine silky tannins and a long, mineral finish.
Food Pairing
Roast duck, lamb, pork, mushroom risotto, roast chicken; Asian: Peking duck, miso-glazed salmon, char siu pork, mushroom ramen, teriyaki salmon; aged cheeses and earthy vegetable dishes.
Production Method
Hand-harvested, de-stemmed and wild-yeast fermented, ~2 weeks on skins; matured ~14 months in French oak (≈25% new). Biodynamic, minimal-intervention practices; often bottled without fining/filtration.
Vineyard Info
Founded by Phillip Jones in 1979 near Leongatha. Close-planted (≈8,500–9,000 vines/ha), very low cropping; biodynamic practices adopted in the 2000s. Jean‑Marie Fourrier became involved in 2020.
