Tasting Note
Mid-yellow; layered creamy lees, cashew, nougat and peanut-brittle notes with stone fruit, citrus and flinty/mineral accents. Dense, concentrated palate with mouth‑watering acidity, steely backbone and a very long, savory finish.
Food Pairing
Western: roast chicken, lobster/creamy shellfish, pork belly, beurre blanc fish, creamy pasta and soft cheeses. Asian: miso-glazed black cod, tempura prawns, chicken yakitori, richer sushi (salmon), and mild Thai coconut curry.
Production Method
Hand-harvested Chardonnay fermented and aged in French oak barrels (selection of fine barrels). Underwent malo‑lactic fermentation, 12–14 months in barrel, minimal intervention and light filtration before bottling.

Founded by Philip Jones in 1979; small estate vineyards around Leongatha, South Gippsland. Known for low yields, sustainable/biodynamic practices; acquired by a syndicate led by Jean‑Marie Fourrier in 2020 to evolve Burgundian precision.
