Tasting Note
Perfumed red fruits (wild strawberry, black cherry) with rose-petal, China tea, forest-floor and gentle spice. Silky, powdery tannins, medium-bodied with bright acidity, subtle toasty oak and a long, savory finish.
Food Pairing
Roasted duck, mushroom risotto, grilled salmon, mushroom and goat-cheese tart; Asian: soy-miso glazed salmon, char siu or soy-braised pork belly, miso eggplant, shiitake and bok choy stir-fries.
Production Method
Hand‑harvested, native‑yeast fermentations with minimal intervention; aged 14–18 months in French Allier barriques (small portion new); no fining or filtration. Biodynamic practices in the vineyard.

Founded by Phillip Jones in 1979 at Leongatha. Estate converted to organic in 1993 and biodynamics from 2002; acquired by Jean‑Marie Fourrier’s group in 2020.
