Tasting Note
Perfumed violets, pink grapefruit and pomegranate with red cherry, mushroomy-umami and baking spice. Plush, textured mid-palate, fine silky tannins and a long, juicy, spice-laced finish.
Food Pairing
Western: roast duck, mushroom risotto, herb-crusted lamb, aged gouda. Asian: Peking duck, char siu, shiitake stir-fry, soy-glazed salmon.
Production Method
Hand-sorted, whole-berry to open fermenters with native yeasts and hand plunging; free-run racked to French Allier barriques; malolactic in barrel; aged ~14–18 months, minimal/no filtration.
Vineyard Info
Founded by Phillip Jones (vineyard planted 1979). Practises organic/biodynamic viticulture since 1993/2002; small Leongatha estate vineyards supply Premium, Estate and Reserve cuvées. Jean‑Marie Fourrier became involved in management in 2020.
