Tasting Note
Concentrated dark cherry and black plum with forest‑floor, five‑spice, cocoa and cedar. Silky, tightly woven palate with fine powdery tannins, bright acidity and a long, mineral‑tinged finish.
Food Pairing
Western: roast duck, mushroom risotto, pork tenderloin, roasted lamb, seared tuna; Asian: Peking duck, char siu, miso‑glazed salmon or eggplant, Korean bulgogi.
Production Method
Hand‑harvested, very low yields; unfiltered; matured 14–20 months in new French Allier oak (c.60% new reported); minimal intervention, organic/biodynamic farming.

Bass Phillip (Leongatha, founded by Phillip Jones) is a small, highly regarded estate farming organically since 1993 and biodynamically since 2002. Reserve is from close‑planted MV6 heritage clones and very low yields for concentration.
