Tasting Note

A classic Pauillac: blackcurrant and cassis with cedar, graphite and tobacco; evolved leather, dried herbs and savory, mushroom notes. Firm but integrated tannins and a long, mineral finish. (50 words max)


Food Pairing

Western: roast lamb, prime rib, beef bourguignon, aged hard cheeses (Comté, Manchego). Asian: Peking duck, char siu (Cantonese BBQ pork), Korean bulgogi or galbi, soy-glazed beef, braised short ribs (Korean/Chinese).


Production Method

Traditional Pauillac vinification: destemmed grapes, temperature-controlled alcoholic fermentation, malolactic conversion and aged in French oak barrels (~16–18 months; ~50–55% new oak).


Vineyard Info

Cinquième Cru (1855) estate owned by the Borie–Castéja (Borie-Manoux/Castéja) family; ~60 ha planted on deep gravelly soils in Pauillac.
