Tasting Note
Dense, ripe black cherry and blackcurrant with cocoa, mocha, licorice and cedar; powerful, concentrated, backward tannins and toasted oak, long mineral-tinged finish.

Food Pairing
Western: roast lamb, braised beef short ribs, venison, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi/galbi), char siu, soy-braised beef, mushroom hotpot.

Production Method
Hand-harvested, very low yields (~20 hl/ha), fermented in temperature-controlled wooden vats, malolactic in barrels; aged 18–24 months in 100% new French oak; bottled unfined/unfiltered.

Small 2–2.5 ha estate on the limestone plateau; acquired by Gérard Perse (Vignobles Perse) in 2001; Michel Rolland consultant; tiny production (~400 cases).
