Tasting Note
Inky, concentrated Merlot-led wine: blackcurrant, blackberry, mulberry, candied cherry, licorice, espresso/ganache and forest-floor notes. Opulent, velvety texture with polished yet firm tannins and a very long, mineral finish.
Food Pairing
Western: roast lamb, ribeye, braised short ribs, aged hard cheeses. Asian: Peking duck, char siu, Korean bulgogi, soy-braised beef, Japanese sukiyaki.
Production Method
Hand-harvested; native-yeast fermentation in temperature-controlled wooden vats; 3–5 weeks maceration; malolactic in barrel; aged ~24 months (majority in new French oak) and six months on lees; bottled unfined/unfiltered.

Tiny 2–2.5 ha Saint-Émilion Grand Cru owned by Vignobles Perse (Gérard Perse) since 2001; very low yields, old vines (~45 years), annual production ~4,800 bottles.
