Tasting Note

Pure, mineral-driven Chardonnay with white peach, pear, citrus and floral notes, brioche and almond complexity, saline minerality, bright acidity and a textured, concentrated palate leading to a long, elegant finish.

Food Pairing

Western: lobster with beurre blanc, grilled/poached white fish, roast chicken, creamy mushroom risotto. Asian: miso-glazed black cod, tempura prawns, sushi (fatty tuna/sea bream), Cantonese steamed fish with ginger and scallions.

Production Method

Hand-harvested; whole-cluster pressing; spontaneous fermentation; 18 months élevage in French oak (≈20–30% new), foudres and glass containers; minimal sulphur; no fining or filtration.
