Tasting Note
Refined and concentrated Puligny: floral and citrus top notes with white peach, pineapple and orchard fruits, almond/biscuit nuances, stony minerality, bright saline acidity and a long, savory finish.

Food Pairing
Western: lobster, langoustine, roasted chicken, sole meunière, creamy risotto, Comté or triple-cream cheeses. Asian: sashimi, miso-glazed black cod, tempura prawns, steamed fish with ginger and scallions, Thai coconut fish curry.

Production Method
Organic/sustainable viticulture, hand-harvested fruit; slow, gentle pressing; indigenous-yeast ferments; élevage ~18 months in large foudres, Stockinger/228L barrels and glass wineglobes with limited new oak; light fining/filtration.
