Tasting Note
Deep dark-plum and black-cherry core with mulberry, cocoa, espresso and Chinese five-spice notes. Velvety texture, ripe chocolate and licorice accents, bright mountain freshness and a long, spicy finish.

Food Pairing
Western: roast beef, braised short ribs, mushroom risotto, lamb chops. Asian: Peking duck, char siu (BBQ pork), bulgogi or Korean BBQ beef, miso-glazed eggplant or teriyaki dishes.

Production Method
Hand-harvested small-lot fermentation with careful extraction; matured in French oak (a portion new) for approximately 18–20 months before blending and bottling.
