Tasting Note

Concentrated blackcurrant, blackberry and mulberry with bay leaf, Indian spice and dark chocolate; espresso and walnut notes. Full-bodied with firm, grainy tannins and a long, spicy finish.


Food Pairing

Western: grilled ribeye, roast lamb, braised beef short ribs, mushroom risotto. Asian: Korean BBQ (bulgogi), char siu, Szechuan beef, Peking duck.


Production Method

Parcel-by-parcel fermentation with tailored pump-overs; aged ~22 months in French oak (high % new) to integrate oak and fruit, minimal intervention to preserve site character.
