Tasting Note

Crisp, mineral-driven Meursault: lemon and white orchard fruit, wet stone, toasted hazelnut and subtle beurre notes, silky lees texture and a long, saline finish (bright acidity with refined weight).

Western: roast chicken, grilled white fish, creamy pasta, soft cheeses (Brie, Camembert). Asian: miso-glazed cod, seared scallops, sushi (fatty salmon), tempura, light Thai coconut curries.

Production Method

Hand-harvested old-vine Chardonnay; organic/biodynamic viticulture, whole‑cluster press, ferment and élevage in mainly old oak (small % new), extended lees aging, minimal sulfur, no fining/filtration.
