Tasting Note
Deep salmon-pink. Bright red cherry, wild strawberry and blood orange over brioche, toasted hazelnut and subtle truffle/earth. Silky mousse, saline chalkiness and long, refined finish.

Western: smoked salmon, lobster or shellfish, roast pork or porchetta, roast duck breast. Asian: sashimi and sushi, tempura, miso-glazed seabass, lightly spiced Thai or Vietnamese dishes.
