Tasting Note
Salmon‑pink with aromas of red and black berries, candied citrus, dried rose and sweet spice. Creamy, mouth‑filling palate of cherry, tangerine and almond, bright acidity and chalky saline minerality leading to a long, refined finish.
Food Pairing
Western: poached lobster, crème fraîche seafood pasta, salmon tartare, roast pork, duck with berry sauce. Asian: sashimi/sushi, tuna tataki, citrusy Thai salads, yuzu marinated scallops, miso‑glazed fish.
Production Method
Vintage 2009. Blend 55% Pinot Noir (≈10% as still red wine) and 45% Grand Cru Chardonnay. Fermented mainly in stainless steel, partial malolactic, aged ~132 months on lees, disgorged July 2021, dosage 7 g/L.
