Tasting Note

Fine citrus and yellow apple with white flowers, blanched almond and brioche notes. Precise chalky minerality, creamy texture, lively acidity and a long saline, mouthwatering finish.

Oysters, lobster or scallop risotto, creamy shellfish dishes, whole sweetbreads; Asian: sashimi (hamachi), sushi, teriyaki scallops, delicate tempura, seafood ramen.


Production Method

Méthode traditionnelle; 100% Chardonnay from Côte des Blancs. ~50% of base wines vinified in older oak, extended lees ageing (~11–12 years), disgorged with ~7 g/L dosage (disg. Oct 2018 for this release).

Maison Billecart‑Salmon, founded 1818 and based near Épernay/Mareuil‑sur‑Ay, sources Grand Cru Chardonnay from Cramant, Chouilly and Mesnil‑sur‑Oger; renowned for elegant, long‑aged Champagnes.
