Dark cherry, raspberry and red-plum with rhubarb and floral spice; earthy, savory undertones, fine-grained silky tannins and a long, savory finish.

Production Method
Hand-harvested fruit (≈95% destemmed, ≈5% whole-cluster), native yeast open-top fermentation, 15–17 months in French oak (≈35% new); minimal sulphur, no fining and limited filtration; organic practices in the vineyard.

Family-owned Bindi estate (Dhillon family). Block 5 planted 1992 (~0.5 ha), north-facing on quartz-riddled soils at ~500m elevation; tiny, low-yield single-vineyard bottling.
