Tasting Note
Golden straw with an ultra-fine mousse. Aromas of brioche, toasted hazelnut, lemon curd, oyster shell and sea spray. Palate shows creamy pastry, stone fruit, truffle and saline minerality, bright acidity and a long savoury finish.

Food Pairing
Western: oysters, lobster, scallops, smoked salmon, roast chicken, creamy pasta, mushroom risotto. Asian: sushi and sashimi, tempura, miso-glazed fish, sashimi-style seafood, delicate Chinese seafood or Cantonese steamed fish.

Production Method
Méthode traditionnelle (traditional bottle fermentation). Extended tirage (10+ years on lees), partial malolactic fermentation on selected parcels, late disgorgement and low dosage (typically 1.6–3 g/L).
