Tasting Note
Deep black-fruit core of blackcurrant, blackberry and boysenberry with graphite, crushed stone, cedar and violet notes. Full-bodied, muscular tannins, bright mountain acidity and a long mineral finish.

Western: grilled ribeye, roasted venison or game, braised short ribs, aged cheeses (Comté, aged Gouda). Asian: Korean BBQ (galbi/bulgogi), Peking duck, miso‑glazed dishes, char siu, umami‑rich braised beef.
Production Method
Single‑vineyard Cabernet fermented in small lots, extended maceration and aged in French oak barrels (high % new) for roughly 18–22 months to build structure and complexity.
