Tasting Note
Concentrated blackberries, kirsch and cassis with graphite, cedar, pine-needle and herbal notes (rosemary, sage, lavender). Mineral, savory backbone, polished yet assertive tannins and a long, layered finish.
Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, mushroom risotto, aged hard cheeses. Asian: Korean barbecue (galbi/bulgogi), char siu, Peking duck, Szechuan beef, miso-glazed grilled vegetables.
Production Method
Hand-harvested mountain fruit, small-lot fermentations (native/selected yeasts), extended maceration; aged in French oak (majority used barrels) for ~20–28 months and bottle-aged prior to release.
Vineyard Info
Bond (founded by Bill Harlan, 1996) produces single-vineyard 'Grand Crus'. Pluribus is a 7-acre Spring Mountain site (1,137–1,327 ft) on decomposed volcanic soils, dry-farmed in many vintages.
