Tasting Note
Concentrated blackcurrant, blackberry and blueberry with plum and cassis, savory sage, graphite, cedar and licorice; firm, fine-grained tannins, bright acidity and a long mineral finish.

Food Pairing
Grilled ribeye, roast or braised short ribs, herb-crusted lamb, aged cheddar or comté; Asian: Korean BBQ (bulgogi), char siu, braised beef noodle soup, Peking duck with hoisin.

Production Method
Small-lot, single-vineyard Cabernet harvested from steep, cobbly sites; fermented in small lots and matured in French oak barrels (portion new) for extended barrel ageing (estimate ~18–22 months).
