Tasting Note
Blue/black fruits (blackcurrant, blackberry, blueberry), violet and graphite, cedar, tobacco and dark chocolate; very concentrated, perfumed, with firm grainy tannins, bright acidity and a long mineral finish.

Food Pairing
Western: grilled ribeye, roast lamb, venison, aged cheddar or Comté. Asian: Korean BBQ (bulgogi/galbi), char siu or Cantonese roast duck, Sichuan-style beef.

Production Method
Hand-harvested, small-lot fermentation, aged in French oak barrels (new/used mix) with extended élevage before release.
