Tasting Note
Blue/black fruits (blackcurrant, blackberry) with rose, sagebrush, graphite, pine‑nut and clove notes; medium‑full body, chalky/firm tannins, mineral-driven acidity and a long, fresh finish with cocoa and leather echoes.

Food Pairing
Western: roasted lamb, grilled ribeye, venison, mushroom risotto. Asian: Korean BBQ (galbi), braised short ribs, char siu, Peking duck, Sichuan-style beef.

Production Method
Hand-harvested single-vineyard lots, small-batch fermentations with extended maceration; aged ~20–22 months in French oak (predominantly new); minimal fining and filtration.
