Tasting Note
Concentrated blackcurrant and wild blueberry with dark chocolate, spice, cedar and mineral undertones. Full-bodied, vibrant acidity, fine-grained ripe tannins and a long, layered finish with tobacco and earthy nuances.

Western: grilled ribeye, roasted lamb, beef Wellington, aged Comté or Gouda. Asian: Korean galbi (BBQ short ribs), bulgogi, Cantonese roast duck, char siu (roast pork).

Production Method
Hand‑harvested fruit from a rocky, volcanic site; small-lot fermentation and aging ~28 months in ~40–60% new French oak; blended and bottled to preserve structure.
