Concentrated black and blue fruit (blackberry, plum, cassis) with dark chocolate, graphite, violet and savory herbs. Polished, fine-grained dusty tannins, lively acidity and mineral lift; layered, chewy texture and a long, expressive finish.
Food Pairing
Western: grilled ribeye, roasted lamb, braised short ribs, aged hard cheeses (cheddar, manchego). Asian: Korean BBQ (galbi), char siu, Peking duck, Sichuan-style beef, miso-glazed eggplant.
Production Method
Hand-harvested, small-lot fermentations and careful extraction; blended and aged approximately 18–20 months in French oak (majority new and some used); lightly filtered before bottling.
Vineyard Info
BOND, founded by Bill Harlan and Bob Levy, produces single‑vineyard Cabernet crus. St. Eden sits on an 11‑acre north‑facing rocky knoll near Oakville with iron‑rich fractured volcanic soils, yielding concentrated, mineral-driven fruit.
