Tasting Note

Concentrated blackcurrant and dark plum with graphite, cedar, dried herbs and cassis. Pervasive dark spice, fine-grained tannins and a long savory finish showing minerality and tobacco notes.

Western: grilled ribeye, roast lamb, beef short ribs, aged cheddar. Asian: Korean BBQ (bulgogi), soy‑braised short ribs (galbi), hoisin/char‑siu pork, Sichuan beef dishes.

Production Method

Small-lot, single‑vineyard vinification; hand‑harvested fruit, destemmed, fermented in small open-top tanks, malolactic in barrel; aged in new French oak (majority) with minimal fining/filtration.
