Tasting Note
Brooding dark cherry and berry fruit with warm spice, baking chocolate, licorice and floral lift. Medium–full body, polished yet firm tannins, mineral backbone and a long, elegant finish.

Food Pairing
Western: roast game birds, poularde à la crème, beef short ribs, mushroom risotto, aged Burgundian cheeses. Asian: Peking duck, hoisin/soy-glazed pork, Korean bulgogi, shiitake mushroom hot pot, Cantonese char siu.

Production Method
Hand-harvested; ~20% whole-bunch fermentation; gentle extraction in small vats; aged 12–14 months in French oak (about 30–50% new).
