Tasting Note
Concentrated blackcurrant and blackberry with graphite, cedar and violet notes. Precise acidity, fine-grained filigree tannins, layered mid-palate and a very long, mineral-saline finish.

Food Pairing
Western: roast lamb, beef tenderloin, duck confit, aged hard cheeses (Comté/Gruyère). Asian: Peking duck, char siu, Korean bulgogi or galbi, soy-braised short ribs, umami-rich mushroom hot pot.

Production Method
Hand-harvested; plot-by-plot fermentation in temperature-controlled vats at a gravity-fed winery; extended maceration; ~18 months ageing in 75% new oak and 25% one-year-old barrels.
