Food Pairing: Western: roast lamb, beef tenderloin, duck confit, aged hard cheeses (Comté/Gruyère). Asian: Peking duck, char siu, Korean bulgogi or galbi, soy-braised short ribs, umami-rich mushroom hot pot.
