Tasting Note

Powerful, complex Grand Cru: black cherry, blackberry, raspberry, violet and rose petal with cocoa, orange zest, mineral/saline undertones, firm ripe tannins and a long, sapid finish.

Roast duck, saddle of venison, beef bourguignon, mushroom risotto, Époisses or aged cheeses; Asian pairings: Peking duck, soy‑glazed short ribs, mushroom hot pot, braised pork belly.

Production Method

30–50% whole-cluster fermentation; 10–15 day maceration in wooden vats; aged 18–20 months in French oak barrels (≈45% new).
