Tasting Note

Pure red and blue berry fruits, violet and mineral notes with spicy, smoky oak. Medium-full, focused and tense palette with firm, fine tannins and a long, saline finish.

Roast beef, venison, duck confit, mushroom risotto; Asian: Peking duck, char siu pork, beef bulgogi, miso-glazed aubergine or salmon.

Production Method

Hand-harvested; 30–50% whole clusters; 10–15 day maceration in wooden vats; malolactic fermentation; aged 18–20 months in French oak (approx. 35% new).
