Tasting Note
Dense black-fruit core of blackberry and black cherry with dark chocolate, espresso, panforte spice, cracked pepper and balsamic undertones. Lush, highly concentrated palate with intense, fine chocolate tannins and bright freshness on the finish.
Food Pairing
Western: grilled ribeye, charred lamb shoulder, braised short ribs, aged hard cheeses. Asian: Cantonese roast duck, char siu, Korean BBQ short ribs, spicy Sichuan beef, hoisin or black‑bean stir fries.
Production Method
Dry‑grown (unirrigated), own‑rooted old vines; hand‑harvested, fermented in open‑top fermenters with regular pump‑overs, basket‑pressed; matured in 100% new 300L French oak hogsheads for ~48–50 months, then bottle aged.
Vineyard Info
Chris Ringland (ex‑Rockford) purchased the Stone Chimney Creek / Flaxman’s Valley vineyard in 1994; vines planted ~1910, ~1.5 ha dry‑grown, unusually thick‑skinned pre‑phylloxera Shiraz, tiny yields and extremely limited production.
