Tasting Note
Salmon‑pink with very fine mousse. Aromas of strawberry, raspberry, candied cherry, marzipan, hazelnut and citrus; fresh, sapid palate, creamy mid‑palate and very long, citrus‑tinged finish.

Food Pairing
Western: grilled Fiorentina steak, seared tuna, smoked salmon, shellfish, creamy cheeses, seafood pasta. Asian: sushi/sashimi, tempura, yakitori, Thai seafood salads, lightly spiced Chinese stir‑fried seafood.

Production Method
Metodo Classico (traditional method). Saignée short maceration of Pinot Noir, fermentation in oak barrels, secondary bottle fermentation and ~8–9 years on lees; Extra Brut dosage.
