Tasting Note
Intense salmon-pink with a fine persistent mousse. Aromas of wild strawberry, blood orange, cherry, brioche, hazelnut and mineral notes. Creamy, lively palate with silky texture, bright acidity and a long mineral finish.

Food Pairing
Western: oysters, lobster, smoked salmon, shellfish, creamy seafood risotto, wagyu tartare. Asian: sushi/sashimi, tempura, spicy Thai prawn salad, char siu, smoked fish with daikon.

Production Method
Metodo Classico (traditional): brief skin maceration for rosé color; washing/drying of bunches; 8 months fermentation in small oak; ~8 years aging on lees; Extra Brut dosage.

Ca' del Bosco, founded by Annamaria Clementi and Albano/ Maurizio Zanella in Franciacorta (1960s–70s), is a pioneer of the region; this cuvée is from a few historic, certified-organic vineyards.
