Tasting Note
Bright golden with fine mousse. Aromas of green apple, lemon rind, white flowers, mint and brioche. Linear, saline palate with creamy texture, citrus drive and a long, precise finish.

Oysters, raw shellfish, sushi/sashimi, tempura, ceviche; poached/grilled white fish, roasted chicken, creamy risotto, fresh pasta with shellfish, dim sum, lightly spiced Asian seafood dishes.

Production Method
Metodo Classico (traditional method). Base wines fermented ~5 months in small oak casks; average 48 months on lees; disgorged without added dosage (dosage zéro) using Ca’ del Bosco’s low-oxygen system.
