Tasting Note
Concentrated black cherry, plum and blackberry with floral notes, cocoa, crushed chalk, spice and cedar. Full-bodied, dense and layered with plush texture, ripe velvety tannins and long mineral finish.

Food Pairing
Roast leg of lamb, beef ribeye, duck confit, mushroom risotto; Asian: Peking duck, Korean BBQ short ribs, char siu, braised beef with shiitake.

Production Method
Hand-harvested, fermented in thermo-regulated stainless steel vats, aged ~18-20 months in approximately 70% new oak barrels.
